She lives in upstate NY, so the vegetables in her CSA share are similar to ours. She posts wonderful recipes and it’s free! (Click the “subscribe” button on her page to receive updates on new posts.) CHAMOMILE
Flowers are edible, leaves are also edible but may be bitter, stems are generally not eaten.
Uses for fresh flowers: add to salads, to ice cubes, decorate cakes + cupcakes, decorate drinks, make tea (either with fresh or dried flowers).
Benefits include: calms upset stomach, relaxing, stress relief, relieves baby teething pain, relieves eye strain, etc.
Caution: some people who are allergic to ragweed may also be allergic to chamomile.
- To dry fresh flowers: Remove flowers from stems, wash and shake off. Lay in a single layer on a clean dish towel, or a parchment paper/paper towel lined baking sheet or plate. Let dry for about a week, or a little longer, tossing every day, until totally dry. Store in a sealed glass container for about 6 months, or a brown paper bag for shorter time.
- To make chamomile tea with dried flowers: to make infused tea. Add 2 tablespoons dried flowers to a cup, add 8 oz. Boiling water, steep for 5-10 minutes (not longer of it will become bitter), strain and serve. Add honey or sugar if desired
- To make chamomile tea with fresh flowers: Put about 4 tablespoons fresh flowers in a cup, add 8 oz. Boiling water, steep for 5-10 minutes (not longer or it will become bitter), strain and serve. Add honey or sugar if desired.
- For teething baby: make chamomile tea (either with fresh or dried flowers), soak a washcloth in the tea, freeze, let baby chew on washcloth.
- Stress relief: add chamomile (using either fresh or dried) to bath water.
- Eye strain relief: make tea (using either fresh or dried), soak a washcloth in it, wring out and lay over closed eyes
